3-ingredient flourless Brownies

The art of baking is really more like a science than an art really.  It requires using specific ingredients and measurements, the right timing and order, and lots of practice. Truth be told, that’s probably why since I became vegan I have had a number of epic failed cakes that came out a little too dense or didn’t set properly. I like the freedom to experiment and let’s be honest, baking doesn’t give you a lot of wiggle room to do that! I can do bread and tarts but cakes are a whole other thing. That’s why I am so excited about these brownies. You can’t mess them up! Seriously, you only need 3 ingredients and a food processor. They are eggless, flourless, and have no added sugar… and yes, they are amazing! They are healthier, more nutritious than regular brownies. They come out perfectly moist on the inside with a firm top. Desserts are often addicting but these brownies make you feel good and satisfied because all three ingredients are whole and not processed.

Flourless brownies?

You are probably wondering what could replace flour and sugar? Just ripe bananas. They are packed with natural sugar, potassium, folate, and vitamin C. Bananas also contain B6 and tryptophan which boost the production of serotonin, the ‘feel-good hormone’ and a feeling of relaxation. So eating a banana before going to bed will help your sleep too.  Someone told me that the inside of banana peels can be used to soothe insect bites? We don’t have mosquitoes where we live so I haven’t tested it!

What is the source of fat? Usually, it is vegan butter or coconut oil. In this recipe, we are using walnut or almond butter. Both can be found in most grocery stores now and are worth having at home. Did you know that you can use almond butter to make almond milk? If you are in a hurry you have to give it a try.

Back to our brownies. Add some cacao and that’s it! Make sure to blend it well. You can add dried fruits since you already have nuts. Bake 20 minutes and let cool down completely before slicing. What I love about these brownies is that they are moist inside but not gooey.

This is one yummy and healthy dessert everyone will love!
It will keep refrigerated for a week but chances are it won’t last that long.

These flourless brownies are so easy to make, they only require 3 ingredients that are healthy, nutritious and so yummy.

  • food processor
  • Baking dish lined with parchment paper

Ingredients
  

  • 2 cups ripe bananas
  • 1/2 cup walnut butter (or almond, cashew butter)
  • 1/2 cup cacao powder

Instructions
 

  • Turn the oven to 350 F
  • Place the equivalent of 1.5-2 cups of ripe bananas in a blender.
  • Add the walnut or almond butter and blend at slow speed.
  • Add the cacao powder and blend until very smooth.
  • Taste and add some sweetener if you want.
  • Pour in the lined baking pan (8x8), smooth the top, and bake for 20 minutes.
  • The top will be firm. Let it cool down for a few hours before cutting or serving.

Notes

Ideas for fun variations: 
Add pieces of candied ginger, dried apricots, or pineapple.
