Best Non-dairy Matcha Ice Cream

This creamy dairy-free ice cream is loaded with antioxidants, and just the right amount of healthy fats and sweetness.

  • Ice cream maker

Ingredients
  

  • 1 16 oz package of organic Silken tofu
  • 1 tbsp Matcha tea powder
  • 1 frozen banana or 1 medium ripe avocado
  • 1 cup of non-dairy milk (cashew, almond or soy)
  • 2-3 tbsp agave or other sweetener of your choice
  • 2 drops green food dye (optional)

Instructions
 

Make the ice cream

  • Freeze your ice cream bowl a few hours before you need it.
  • Whisk the Matcha powder in 2 cups of hot water and 1 cup of non-dairy milk.
  • Blend the silken tofu, banana or avocado, vanilla extract, the sweetener, and the green dye until smooth.
  • Taste and add more sweetener or Matcha powder if you want.
  • Follow the instructions of your ice cream maker and start churning!

Notes

If you don't have matcha powder, you can use good green tea. Just steep the tea for 3-5 minutes, then discard the tea leaves or bags (or better, dump their content in any house plants as it will become slow release fertilizer)
