As a vegan chef, cooking instructor and food consultant, I am blessed to share my passion for international flavors, a compassionate world, optimal health and environmental protection. They are all interconnected because you can’t really have one without the others. I hope that Kindcooking.com can help many others connect the dots and join the hundreds of millions around the world living a kinder and more sustainable life.
A little background:
My culinary journey started in the South of France where I was born, then took me through Europe, onto America, then Asia and South America. I grew up eating delicious rich food my grandmother made (think creamy white and wine sauces) and fresh Mediterranean dishes my mother prepared. My family was by no mean vegetarian or vegan but we were not big meat eaters either. This being said, I must confess that I have had my fair share of strange things being served as food as I grew up! But I soon came to realize that it was the sauces, the marinade that tasted so good and that they could have just as well been poured over bread or tofu and it would have been just as good.
Taste and nutrition are always are the forefront of the food I prepare and the classes I teach, because both are required for health and well-being. I studied vegan nutrition to make sure that no deficiencies would be created while transitioning to a plant-based diet and learned many interesting things in the process. Taking supplements or consuming certain nutritional foods is one thing but absorbing it, is another. That’s why I always incorporate nutritional tips in all my classes.
For many people certain songs bring back a specific memory of where they were and who they were with when they heard them. Well, while I love music, I have a memory of food attached pretty much to every place and profound moment I have experienced in my life. It was the way love was shared and received in my life so I am continuing the tradition! But this time, I am proud to say, it is without any collateral damage, pain or sufferings for all parties involved! A plant-based diet is really the only diet for caring and compassionate individuals and the only path to sustainable peace in the world.
